Vegan Chocolate Chip Cookies

  • 2 flaxseed eggs (2 tbsp ground flaxseed + 5 tbsp water)
  • 1 cup vegan butter
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups vegan chocolate chips.

Preheat oven to 175°C. Prepare flaxseed eggs and set aside. Cream together butter and sugar until smooth. Add flaxseed eggs and vanilla.

In a separate bowl, mix flour, baking soda, and salt. Combine wet and dry ingredients. Fold in chocolate chips. Drop spoonfuls onto a baking sheet and bake for 10-12 minutes.

Vegan Banana Bread

  • 3 ripe bananas (mashed)
  • 1/3 cup melted vegan butter
  • 1 tsp baking soda
  • pinch of salt
  • 3/4 cup sugar
  • 1 chia seed egg (1 tbsp chia seeds + 2.5 tbsp water)
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour.

Preheat oven to 175°C. Mix mashed bananas and melted butter. Add baking soda, salt, sugar, chia seed egg, and vanilla.

Fold in flour until combined.

Pour into a loaf pan and bake for 60-65 minutes.

Vegan Apple Cinnamon Muffins

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/3 cup vegetable oil
  • 2/3 cup applesauce
  • 1 tsp vanilla extract
  • 1 cup diced apples.

Preheat oven to 190°C. Mix dry ingredients in a bowl. In a separate bowl, combine oil, applesauce, and vanilla.

Mix wet and dry ingredients. Fold in diced apples.

Spoon into muffin tins and bake for 20-25 minutes.
